Umami isn’t a word that gets thrown around a lot in bourbon circles, but maybe it should be. Earthy and sweet on the nose, with a distinct note of petrichor and spruce needles reminiscent of lush Pacific Northwest forests. Mint chocolate chip ice cream on the palate quickly retreats to reveal dark brown sugar, subtle vanilla toasted hazelnuts, and gentle candied ginger. Finishing with a beautiful balance of chocolate, vanilla, toasted oak, and gentle smoke, this whiskey blew us away, and we’re told it will never be produced again.

This exceedingly rare single barrel of Fiddler Heartwood Bourbon begins with a high-wheat mash bill before being finished on hand-harvested, charred Georgia white oak heartwood staves that are placed in the barrels for the final few months of maturation. In addition to the wheat lending a soft, silky texture and salted caramel, the Georgia staves lend maple, sandalwood, oak, and a rounder mouthfeel, for a textured complexity.
